DHEVI Pattani Sweet Salt & Su-ngai Upe Pepper Origin Satunเทวี ช็อกโกแลตบาร์เกลือหวานปัตตานี พริกไทยสุไหงอุเป (สตูล)
Two local ingredients, each carrying a story shaped by time, place, and the wisdom of generations.
Beyond their distinctive flavours, they hold the history of the land and the lives of the people who have nurtured these traditions through the years — a precious part of Thailand’s food heritage, worthy of being cherished and passed on.
Crafted from quality Thai cacao grown by farmers in the North, this chocolate combines two treasured Southern ingredients: Pattani Sweet Salt and Su-ngai Upe Pepper. The mellow saltiness of Pattani Sweet Salt, with a subtle sweetness on the tip of the tongue, brings out the depth of the cacao. Gradually, the rich aroma and gentle warmth of Su-ngai Upe Pepper unfold, creating a distinctive yet harmonious balance of deep cacao, mellow saltiness, and lingering pepper warmth in every bite.
Pattani Sweet Salt
For more than 700 years, the people of Pattani have carried on the art of coastal salt-making, a tradition deeply rooted in the life of the shoreline. Pattani remains the only salt-producing area in Southern Thailand, with its main production area around Bana Subdistrict and neighbouring communities in Mueang Pattani District, along the shores of Pattani Bay.
In the local Malay language, this salt is known as “Garam Manis” — Garam meaning salt and Manis meaning sweet. Yet the name speaks not of sweetness from sugar, but of a particular quality in its taste: a mellow, rounded saltiness touched by a subtle sweetness that rests on the tip of the tongue and lingers in the throat, never harsh or bitter.
This delicate character comes from the natural setting of Pattani Bay, where fresh water meets the sea. Once covering thousands of rai, the salt fields now span just over 500 rai, with around 100 salt makers keeping the tradition alive. Pattani Sweet Salt is more than a seasoning. It reflects the knowledge, traditions, and way of life of coastal communities, carrying a heritage shaped and preserved through generations.
Su-ngai Upe Pepper
Su-ngai Upe Pepper is an ancient native variety from Thung Wa District, Satun Province, with a history of cultivation spanning more than 150 years, dating back to the reign of King Rama V. According to local historical accounts, Phraya Phuminat Phakdi, the governor of Satun at the time, invited Chinese settlers from Penang to bring pepper plants to the Su-ngai Upe area. From those beginnings, this pepper became part of the agricultural heritage of the region, cultivated and passed down through generations.
Its peppercorns are small, round, and densely formed, unlike those of more commonly found varieties. Shaped by its native lineage and traditional cultivation methods, Su-ngai Upe Pepper possesses a character all its own. Its deep, fragrant aroma is followed by a naturally rich warmth — distinctly peppery, yet never sharp or overpowering. Instead, its gentle heat unfolds gradually, leaving a rounded warmth on the palate.
Although this old variety once came close to disappearing from the region, it is now being revived by a social enterprise committed to preserving its original plant genetics and the traditional knowledge of its cultivation. The revival of Su-ngai Upe Pepper continues a heritage carried by the community, preserving its native variety and traditional cultivation knowledge. Infusing this pepper into the chocolate offers another way to share the value of this native variety and its community story through a new taste experience.
